    Tasted at BI Wine & Spirits' 10-Years-On tasting, the 2007 Domaine de Chevalier was tasted from two bottles. I returned the first as it felt a little volatile on the nose, but the second was as it should be. This has a very refined bouquet with scents of warm gravel and black olives permeating the dark berry fruit, all very well defined and focused. The palate is medium-bodied with fine tannin, very fresh and generous in the mouth with superb mineralité and tension towards the tertiary finish. What a lovely Domaine de Chevalier—à point—but with the substance to suggest that it will not go downhill in any hurry. Tasted February 2017.

Sweet and juicy, with an attractive layered texture and very good definition to the flavors of cherry, mocha and leather. Cooling acids contribute to the impression of shape and structure. Finishes juicy and long, if a bit youthfully brutal today. (A second sample was more pliant in the middle palate, and broader and sweeter on the back end.) This high-altitude, limestone-rich site, always picked late, is exactly the type of property that was able to take advantage of the favorable September and October weather in 2007.

Wonderfully sweet and silky in the mouth and yet with a steely impression of spine. Boasts lovely clarity and penetration and finishes with superb sappy persistence. This was finished with its malo but had not yet been racked. Roumier combined the red and white soil components of this wine at the outset but kept one barrel of each separate: on this day, the wine was dominated by the almost painful cut that comes from the white soil but with more time the red soil component will fill in the middle palate.

Hints of mocha, vanilla, maraschino, and almond paste lend a confectionary note to generously rich cassis and raspberry, while Latakia tobacco, peat, clove, black pepper, star anise, and cumin contribute commune-typical Vosne-Romanee personality in spades. The high-toned, sweet themes continue inner mouth, with intimation of heliotrope, rowan, and lily perfume, while the wine’s smoky, spicy elements seem to descend into a low-register undertone of roasted red meats and forest floor. As this opens to the air, a subtly sweet-saline suggestion of lobster shell reduction adds richness and succulence. Finishes juicy and long, if a bit youthfully brutal today. (A second sample was more pliant in the middle palate, and broader and sweeter on the back end.) This high-altitude, limestone-rich site, always picked late, is exactly the type of property that was able to take advantage of the favorable September and October weather in 2007.

Wonderfully sweet and silky in the mouth and yet with a steely impression of spine. Boasts lovely clarity and penetration and finishes with superb sappy persistence. This was finished with its malo but had not yet been racked. Roumier combined the red and white soil components of this wine at the outset but kept one barrel of each separate: on this day, the wine was dominated by the almost painful cut that comes from the white soil but with more time the red soil component will fill in the middle palate.
