With time in the glass, the wine turns more delicate, showing another side of its personality. A 65 note of licorice adds complexity on the multi-dimensional finish. Esmonin used 100% whole clusters for the fruit from the top of the vineyard, but fully destemmed the fruit from the bottom of the hill, resulting in about 70% whole clusters for the final blend. The Clos St. Jacques saw 100% new oak. |
