The 2014 Brut 51° North is the inaugural wine of the prestige cuvée. It is a blend of 64% Chardonnay and 36% Pinot Noir. Sixteen percent of the base wines were fermented in oak. This is the original disgorgement. Evolution is evident on the nose with dried white currant, which dissolves into smoky, flinty creaminess. The palate is superbly fresh, savory and salty right away. Touches of roasted cashew, toasted sesame, seaweed and oyster shell spell delicious saltiness. This is taut, bright and so clean-cut. Dosage is 8 grams per liter.
