Substantial, firm but finely-tannic and formidably concentrated, it finishes with dark, faintly bitter berries, roasted meats, beef blood, a soy-like savor, and an intense yet hard to describe minerality. The wine tastes like something one should if anemic. Heady yet not hot in its nearly 15% alcohol, palpable extract rich and thick yet not leaden, it will need at least 5-7 years, I suspect, if it is to be tamed and refined at all. Firm in feel, and with its dense meat and bitter-edged black fruit underlain by a sensation of crushed stone, this manages to avoid austerity – and, more remarkably, opacity – thanks to its primary juicy freshness; sweet, high-toned inner-mouth esters suggestive of distilled fruits; and to a wealth of mineral nuances (marine, crustacean, peaty) that manage to shine through in a penetrating and resplendent finish. Three tanks were made, two destemmed and the third with 70% stems, averaging out to 20% approximately, with tanks of differing sizes. A medium deep crimson ruby. Very appealing on the nose, neither too ripe nor too concentrated, and the red and black fruit on the palate is livened up by a surprising salinity – squid ink suggests Thibault, not a descriptor that really enthuses me, but I think this is going to be a first class Les St-Georges.
