The tart, fresh perfume of Boskoop apple is foremost on the nose, overtaking even the zesty lemon. The palate is fine-boned, bright, crystalline and supremely pure, with an enticing umami backdrop and frothy, foamy mousse that distracts a little from the exquisite aromatics of the fruit.
