I believe that the right time for your Tapanappa Chardonnays is around five years from harvest, and if you have the patience, you will be rewarded with the pleasure I am experiencing here today. 12.9% alcohol, sealed under screw cap. This was harvested on April 12 and 13, 2023, from a season with a heat summation of 1,093 degrees Celsius days. The wine was fermented in French oak barriques, one-third of which were new, and it did not undergo malolactic fermentation. It spent seven months on the lees and seven months in total in barrique before being bottled in November 2023. It has a pH of 3.12pH and 8.47 grams per liter of total acidity. |
