The 2021 Ultreia La Vitoriana shows some unusual toasty notes, hints of raw meat and lots of tannins, and this is the more tannic of the Ultreia range even if they lower the intensity here. The wine is a bit wild, 90% from clay and 10% sand (while La Vizcaína is mostly sand). It fermented with 100% full clusters in a chestnut vat with indigenous yeasts. This north part of the vineyard produced only two barrels, and the barrels were well-seasoned to avoid oak in the wine. This is a powerful wine that is going to need time. Here, they select the grapes from some of their best and oldest vineyards, put them in cold storage for 24 hours and then exclusively select the grapes from the top half of the bunches. It fermented in 7,000-liter oak vats and small stainless steel tanks followed by malolactic and 25 months aging in new French barriques. The phenomenal 2010 Reserva is produced with 90% Tempranillo, 5% Graciano and some 5% of the skins of Malvasía and Viura grapes used for the white wine after it finished fermenting. Here, they select the grapes from some of their best and oldest vineyards, put them in cold storage for 24 hours and then exclusively select the grapes from the top half of the bunches. It fermented in 7,000-liter oak vats and small stainless steel tanks followed by malolactic and 25 months aging in new French barriques.
