A greenhouse-like profusion of leafing and flowering things is imposed over sea breeze, with jasmine; musky narcissus; nose-prickling spice as if from some exotic orchid; iodine-tinged toasted shrimp shells; and toasted grain all pungently present and anticipating the elusive complexity delivered on a caressingly polished yet consummately refreshing and almost ethereally delicate palate. Over time, the sense of creaminess and the refinement of bubbles became more evident, along with a contrasting impression of enhanced piquancy, suggesting hops and lentil sprouts, all in the context of remarkable poise and transparency to nuance. The endlessly fascinating finish remains infectiously juicy and subtly yet mouthwateringly saline. Lucky owners should plan to follow bottles for at least a decade. (And at around 10,000 bottles – twice the volume of the corresponding Corne Bautray and four times that of the Vauzelle Terme – there is at least a better chance you can get hold of some. It pours a highly reflective straw hue and is aromatically forward out of the gate, with savory appeal and notes of citrus oil as well as juicy ripe berries. The palate is juicy and inviting, with approachable silky fruit and a fine mousse. Equally polished on the palate, the 2007 is exceptionally silky and finessed in its tactile impression. A wine of classiness and total understatement, the 2007 should drink well for at least another 5-10 years, perhaps more. There is good brightness in the glass, but the wine’s structure is very much medium in body. Others, such as Bonnivières and Tartaras, exhibited the rigid, austere tannins that are quite common in 2021. Few barrels had great concentration or generosity of fruit; this is a vintage about structure and minerality rather than concentration or fruit sweetness. I would be inclined to leave this for a substantial amount of time before broaching, around 2031, by which time it should show good complexity and terroir expression, and may well be worthy of a higher score. Revealing aromas of spring flowers, herbs, toast, tobacco leaf, red berries and menthol, it's medium to full-bodied, tense and straight, structured and perfectly balanced, with a long, phenolic and chalky finish. From Chavaroche and Fongeant: Wild perfume of botanical herbs, cherry skin, tobacco and smoked meat. This component gives the animal quality to the wine, Jamet said. From Lancement and Le Plomb: Rich and smoky, with deep cherry and cassis flavors and gentle tannins. From Mornachon: Exotic cherry-cola, coconut and baking spices on the nose. Fleshy and sweet, with deep dark fruit flavors and good back-end sweetness. A demi-muid from Mornachon: Explosively perfumed bouquet of ripe red berries, incense and potpourri. Luscious and concentrated, with sweet red and dark berry flavors and an exotic floral pastille quality. From Moutonnes, Cote Baudin and Leyat: Intensely smoky nose offers a complex set of red fruit and floral aromas and a strong note of graphite. This is the only component that Jamet showed me that wasn't fermented with whole clusters and all of this fruit was destemmed. #2, from Gerine: More pungent and smoky, with intense dark berry and incense aromas. Sweet and fruity on entry, then a firm mineral backbone and a peppery quality. #3, from Chavaroche, with a little Fontgeant: Exotic aromas and flavors of red berries and spices. More floral with air, picking up a sexy note of star anise. #4, from Mornachon: Deeper blackberry and cassis on the nose. Densely packed and powerful, with potent dark berry flavors and notes of woodsmoke and licorice. Serious tannic structure here. #5, from Le Plomb: Highly aromatic, offering rose and violet scents and a strong black raspberry quality. Spicy and precise, with expanding sweetness and very good clarity. #6, from Moutonne, with some Cote Baudin and Leyat: Highly aromatic, with deep dark berry preserve and floral oil qualities. Fresher with air, showing impressive fruit intensity and excellent length. #7, from La Landonne, with bits of Cote Blonde, Cote Rozier and Moutonne: Seductive aromas of black raspberry and potpourri become spicier with aeration. Lively but concentrated red and dark fruit flavors, with a smoky, musky note that builds with air. Very long and powerful. The final blend looks to be a deeply fruity and spicy wine, with solid tannic structure and excellent minerality. Decanter (95)
A tasting of component barrels for this wine made for an instructive view of the vintage. Certain sites show the lightness of the vintage, fresh and peppery. Others, such as Bonnivières and Tartaras, exhibited the rigid, austere tannins that are quite common in 2021. Few barrels had great concentration or generosity of fruit; this is a vintage about structure and minerality rather than concentration or fruit sweetness. I would be inclined to leave this for a substantial amount of time before broaching, around 2031, by which time it should show good complexity and terroir expression, and may well be worthy of a higher score. All whole-bunch fermented, and matured mostly in old demi-muids.In Bond€1,365.00
