In the recent decade, the emerging Grower Champagne trend in Champagne is shaking up the industry by challenging the dominance of the big Champagne houses. These small-scale producers, also known as "Récoltant-Manipulant" or RM, grow their own grapes and produce their own Champagne, showcasing the unique terroir and character of their vineyards. Jacques Selosse, Ulysse Collin, and Champagne Vilmart & Cie are among the most prominent names in this trend, producing some truly artisanal and terroir-driven Champagnes.

Those qualities feel especially amplified in this tasting, perhaps because of the presence of wines from the surrounding vintages. The 2007 Cristal Rosé opens with the most captivating, extraordinary bouquet imaginable. Sweet, exquisite and beautifully layered in the glass, the 2007 is intense yet weightless, with extraordinary overall balance and remarkable finesse. Today, the 2007 Cristal Rosé is a wine of pure seduction. There is little doubt the 2007 is a great Cristal Rosé in the making. This is the first vintage in which all of the fruit was farmed according to biodynamic principles. According to winemaker Jean-Baptiste Lécaillon, biodynamic farming has brought increased aromatic presence in the fruit and also given the Pinot a bit more intensity than normal, so much so that in 2007 the blend is 55% Pinot Noir and 45% Chardonnay as opposed to the 60/40 split that has been more typical over the years. In 2007, the fruit was picked in August, which is also unusual, but bud break got off to an early start, so the growing season turned out to be longer than the classic 100-day period that is typical from bud-break to harvest. A wine of sublime delicacy and finesse, the 2009 Cristal Rosé is simply magnificent. The 2009 is surprisingly refined, silky and nuanced for a wine from a warm vintage. The red and floral-infused overtones are quite attractive, but it is the wine's exceptional balance that places it among the best new releases of the year. Over the years, I have had the chance to taste many vintages of Cristal Rosé, a Champagne that needs bottle age to be at its very best. I suspect that will be the case here as well. The 2002 Brut Cuvée Spéciale Les Chétillons, the original release and aged on crown seal, is tremendous. Wow. Ample, sweeping and dramatic, the 2002 is utterly captivating. Smoke, graphite, ash, apricot jam and pastry are some of the many nuances that come alive in the glass, with a top note of reduction that is very appealing. On this day, the regular release is just a touch ahead of the Oenothèque. It’s hard to say exactly why that is, but I suspect that the post-disgorgement time is optimal. The 2007 Dom Ruinart is the first vintage made entirely by Chef de Caves Frédéric Panaïotis, which shows just how long the production cycle is in Champagne. A striking, tightly-coiled wine, the 2007 Dom Ruinart will leave readers week at the knees. In this vintage, Panaïotis took Dom Ruinart, which has traditionally relied on a relatively high percentage of Chardonnay from the Montagne de Reims and tilted the balance to 75% Côtes des Blancs and 25% Montagne de Reims fruit. As a result, the 2007 is much more chiseled and steely than is the norm. The citrus, slate, crushed rock, white pepper, mint and floral notes really sizzle in this powerful, dramatically rich Champagne, with bright saline notes that add freshness and vivacity to the striking finish. The 2007 is a stunning Champagne by any measure. Although it is very early, the 2007 has the potential to go down as one of the great Dom Ruinarts. It is every bit that special. You could lose yourself in the ineffability of this wine’s floral diversity and in its resonantly nut and grain low tones. Hints of apple pip lend subtle additional piquancy on a long and at once soothing as well as stimulating finish, with suggestions of oyster liquor becoming prominent as the bottle stands open for a few minutes, and serving to milk the salivary glands for all that they are worth. Disgorged in January 2019 with six grams per liter dosage, Salon's 2008 Brut Blanc de Blancs Le Mesnil is a striking wine, unwinding in the glass with scents of citrus oil, fresh bread, crisp green apple, white flowers, smoke and oyster shell. Full-bodied, layered and incisive, it's deep and concentrated, with a tightly coiled core of fruit that's underpinned by a racy spine of acidity. Seamless and unerringly precise, it concludes with a long and penetratingly mineral finish. Immense though its potential for aging is, its intensity and balance make it pleasurable as well as persuasive, even today. Given the eye-watering price of this magnum-only release, I was determined to hold the wine to the highest possible standards, but it surpasses even the prodigious 1996 and surely ranks as the finest Salon since at least the 1970s. By contrast to the Bollinger, Comte is not a one-off, nor anything out of the ordinary. It is a label that all committed Champagne lovers adore. Predictable perhaps. But, of course, one thing does vary, and that is the vintage. The ‘worst’ Comte I ever tasted was rather lovely. The ‘best’, and there have been many (1959, 1966, 1996, 2002, 2006) are all sublime and you can now add 2011 to this list. Taittinger always seems to shun the spotlight, unlike Dom Perignon and other more attention-seeking brands and this modesty rather suits this House. I did something that I never do after first tasting my sample bottle. I was so shocked with the sheer class that I sealed the bottle with a simple Champagne stopper and then tasted it again and again over two days. The stress-testing sorts the wheat from the chaff. It is unlikely that anyone who bought a bottle would do this. Still, I like to see how a potentially great wine evolves, opens up, sometimes falls over, and sometimes blossoms over a few days because it gives me an indication of its potential and its true baseline of quality. The fruit is so tense, grand and layered it is remarkable. The flavour, the fizz, the length, the momentum and the overall halo of greatness did not change one iota over nearly 60 hours of being open with no preservation whatsoever. The 2002 Brut Cuvée Spéciale Les Chétillons, the original release and aged on crown seal, is tremendous. Wow. Ample, sweeping and dramatic, the 2002 is utterly captivating. Smoke, graphite, ash, apricot jam and pastry are some of the many nuances that come alive in the glass, with a top note of reduction that is very appealing. On this day, the regular release is just a touch ahead of the Oenothèque. It’s hard to say exactly why that is, but I suspect that the post-disgorgement time is optimal. The 2007 Dom Ruinart is the first vintage made entirely by Chef de Caves Frédéric Panaïotis, which shows just how long the production cycle is in Champagne. A striking, tightly-coiled wine, the 2007 Dom Ruinart will leave readers week at the knees. In this vintage, Panaïotis took Dom Ruinart, which has traditionally relied on a relatively high percentage of Chardonnay from the Montagne de Reims and tilted the balance to 75% Côtes des Blancs and 25% Montagne de Reims fruit. As a result, the 2007 is much more chiseled and steely than is the norm. The citrus, slate, crushed rock, white pepper, mint and floral notes really sizzle in this powerful, dramatically rich Champagne, with bright saline notes that add freshness and vivacity to the striking finish. The 2007 is a stunning Champagne by any measure. Although it is very early, the 2007 has the potential to go down as one of the great Dom Ruinarts. It is every bit that special. Hints of apple pip lend subtle additional piquancy on a long and at once soothing as well as stimulating finish, with suggestions of oyster liquor becoming prominent as the bottle stands open for a few minutes, and serving to milk the salivary glands for all that they are worth. Disgorged in January 2019 with six grams per liter dosage, Salon's 2008 Brut Blanc de Blancs Le Mesnil is a striking wine, unwinding in the glass with scents of citrus oil, fresh bread, crisp green apple, white flowers, smoke and oyster shell. Full-bodied, layered and incisive, it's deep and concentrated, with a tightly coiled core of fruit that's underpinned by a racy spine of acidity. Seamless and unerringly precise, it concludes with a long and penetratingly mineral finish. Immense though its potential for aging is, its intensity and balance make it pleasurable as well as persuasive, even today. Given the eye-watering price of this magnum-only release, I was determined to hold the wine to the highest possible standards, but it surpasses even the prodigious 1996 and surely ranks as the finest Salon since at least the 1970s. If offers a perfect example of the vintage in the Côtes des Blancs, a year in which ripeness and acids were both elevated. By contrast to the Bollinger, Comte is not a one-off, nor anything out of the ordinary. It is a label that all committed Champagne lovers adore. Predictable perhaps. But, of course, one thing does vary, and that is the vintage. The ‘worst’ Comte I ever tasted was rather lovely. The ‘best’, and there have been many (1959, 1966, 1996, 2002, 2006) are all sublime and you can now add 2011 to this list. Taittinger always seems to shun the spotlight, unlike Dom Perignon and other more attention-seeking brands and this modesty rather suits this House. I did something that I never do after first tasting my sample bottle. I was so shocked with the sheer class that I sealed the bottle with a simple Champagne stopper and then tasted it again and again over two days. The stress-testing sorts the wheat from the chaff. It is unlikely that anyone who bought a bottle would do this. Still, I like to see how a potentially great wine evolves, opens up, sometimes falls over, and sometimes blossoms over a few days because it gives me an indication of its potential and its true baseline of quality. The fruit is so tense, grand and layered it is remarkable. The flavour, the fizz, the length, the momentum and the overall halo of greatness did not change one iota over nearly 60 hours of being open with no preservation whatsoever.
