This is showing more promise than ever.

The 2016 Elpidios is a blend of red Rhône varieties, although with new vineyard plantings there is more Carignan. It includes 30% to 50% whole bunches and was matured in used French oak for 12 months, and another 12 months in bottle. It has a backward bouquet at first that opens with time, but it is very well defined, featuring blackberry, clove, bay leaf and white pepper, very understated in style but gaining clarity with aeration. The palate is medium-bodied with fine-grained tannin, quite insistent in terms of grip, and possesses fine backbone courtesy of the Carignan on the slightly ferrous finish. Excellent.

A stablemate of classic Islay distillery Bunnahabhainn and the iconic Tobermory Distillery on Mull, Deanston is a hidden gem of a Highland Malt. Founded on the banks of the River Teith in 1795 as a cotton mill, the beautiful stone building was converted to its present purpose in 1965. Drawing water from the river which also powers its own hydro-energy facility, it has the distinction of being the only energy self-sufficient distillery in Scotland.


The spirit produced here is a classically fine, balanced Highland Malt with a bit of punchiness to its profile that does well ageing relatively unhindered in ex-Bourbon wood as is the case here. The distillery’s production of bottled single malt is small with 85% of the output going into blends. That gives holders of Deanston casks a point of relative rarity that very little of this delicious spirit is bottled as single malt, and even rarer, bottled at an advanced age. As such this will greatly reward patience.


Tasting Note
Fresh and bright with excellent potential given the performance over 9 years of maturation in a single refill hogshead, it was regauged just this year close to 60% ABV, this is well suited to a very long term hold, while Deanston's profile rises as it has done for the past decade. Look for classic apple, pear and stone fruit aromatics alongside crisp barley and cereal notes as it shows a remarkably youthful nose. This is ageing slow indeed with a lot left to give in the years (and decades) ahead.

This sole Auslese bottling of the present Zilliken collection is dominated by white peach, quince, grapefruit and lime. Like several of its siblings, it is marked by both animatingly bright citricity and creaminess of texture – though here, at least in the wine’s youthful state, the two are a bit at odds with each other. Glycerol conveys an oily feel here as well, and the citrus elements turn zesty and candied in the finish, yet all without sacrificing primary juiciness. “We had as good as no botrytis,” noted Zilliken. “We’re talking here principally about perfectly healthy grapes that were lightly desiccated.” A half-bottle with a bit left in it that had been open for two months came amazingly close in quality to freshly opened one. “I’ve been following this open bottle with some surprise myself,” observed Zilliken, adding by way of explanation that there hasn’t been any point in serving the rest of it since the wine was immediately sold out and he doesn’t want to frustrate his clientele. Here’s a bottling with which one should be patient, though I seriously doubt that it will ever deliver quite the complexity or superb balance exhibited by its two Spätlese siblings.

Not a lot has changed except that it seems even more approachable and much better balanced now. It also seems drier than its statistics would suggest. Tight and intense on first taste, this comes around relatively well with a couple of hours of air on the first day tasted, but it isn't expressive until a couple of days later. The initial firmness moderates to some extent, showcasing a relatively approachable young Port. (That doesn't mean it is ready or close to it.) The concentration seems good enough now, so that the hints of alcohol that I saw in June—and again this time around when this was in its first 90 minutes of aeration—seem under much better control. The balance is just more appealing. It shows beautifully with a couple of days of air. As with all Ports of any quality, this could use some time. This is gripping, but it won't sear your mouth with tannins. You are going to have to cellar it awhile to allow it to acquire more complexity and more harmony, though. This is showing more promise than ever.

The 2016 Elpidios is a blend of red Rhône varieties, although with new vineyard plantings there is more Carignan. It includes 30% to 50% whole bunches and was matured in used French oak for 12 months, and another 12 months in bottle. It has a backward bouquet at first that opens with time, but it is very well defined, featuring blackberry, clove, bay leaf and white pepper, very understated in style but gaining clarity with aeration. The palate is medium-bodied with fine-grained tannin, quite insistent in terms of grip, and possesses fine backbone courtesy of the Carignan on the slightly ferrous finish. Excellent.

A stablemate of classic Islay distillery Bunnahabhainn and the iconic Tobermory Distillery on Mull, Deanston is a hidden gem of a Highland Malt. Founded on the banks of the River Teith in 1795 as a cotton mill, the beautiful stone building was converted to its present purpose in 1965. Drawing water from the river which also powers its own hydro-energy facility, it has the distinction of being the only energy self-sufficient distillery in Scotland.


The spirit produced here is a classically fine, balanced Highland Malt with a bit of punchiness to its profile that does well ageing relatively unhindered in ex-Bourbon wood as is the case here. The distillery’s production of bottled single malt is small with 85% of the output going into blends. That gives holders of Deanston casks a point of relative rarity that very little of this delicious spirit is bottled as single malt, and even rarer, bottled at an advanced age. As such this will greatly reward patience.


Tasting Note
Fresh and bright with excellent potential given the performance over 9 years of maturation in a single refill hogshead, it was regauged just this year close to 60% ABV, this is well suited to a very long term hold, while Deanston's profile rises as it has done for the past decade. Look for classic apple, pear and stone fruit aromatics alongside crisp barley and cereal notes as it shows a remarkably youthful nose. This is ageing slow indeed with a lot left to give in the years (and decades) ahead.

This sole Auslese bottling of the present Zilliken collection is dominated by white peach, quince, grapefruit and lime. Like several of its siblings, it is marked by both animatingly bright citricity and creaminess of texture – though here, at least in the wine’s youthful state, the two are a bit at odds with each other. Glycerol conveys an oily feel here as well, and the citrus elements turn zesty and candied in the finish, yet all without sacrificing primary juiciness. “We had as good as no botrytis,” noted Zilliken. “We’re talking here principally about perfectly healthy grapes that were lightly desiccated.” A half-bottle with a bit left in it that had been open for two months came amazingly close in quality to freshly opened one. “I’ve been following this open bottle with some surprise myself,” observed Zilliken, adding by way of explanation that there hasn’t been any point in serving the rest of it since the wine was immediately sold out and he doesn’t want to frustrate his clientele. Here’s a bottling with which one should be patient, though I seriously doubt that it will ever deliver quite the complexity or superb balance exhibited by its two Spätlese siblings.
