    Henri Boillot

The Boillot family established themselves in the region in 1885, and Henri represents the fifth winemaking generation, with his son now overseeing the production of the reds.

The winery is located on the “other” side of the RN74 in an estate that includes the Damy cooperage. This impressive facility affords Henri far more space then if he were couched in some mediaeval maison in one of the villages, which is mandatory when you have such an all-embracing portfolio of wines.

Henri Boillot produces domaine and negociant wines from Burgandy’s most renowned growing areas. Henri is a 5th generation vigneron in the Cote d’Or. Wines of Maison Henri Boillot are produced in a cellar in Meursault and are vibrant and full of character.

In contrast to the jovial expressiveness of the prior wines this is much more reserved with its ripe yet cool aromas of dark berry fruit liqueur, spice and wet stone. The silky and equally cool and restrained middle weight flavors offer outstanding definition on the rich, energetic and hugely long saline-infused finish. This is one seriously impressive Caillerets but note well that it's built to age.

Airy and weightless within the context of the year, the 2012 Volnay Les Caillerets is wonderfully complete and expressive. An exotic mélange of graphite, pencil shavings, white pepper and blue fruits takes shape in a precise, chiseled Burgundy that impresses for its finely cut texture and delineation. Totally vivid in the glass, the Caillerets dazzles from start to finish. This is a great example of the vintage at its very best.

The 2013 Volnay 1er Cru Caillerets, which sees 50% new wood, has a floral, slightly candied bouquet with orange-sorbet scents infusing the mixture of red and black fruit. The palate is medium-bodied with crisp tannins, quite fine and tense, with a precise finish that neatly carries the oak. This is probably the best of the Volnay ‘13 from the domaine this year.

Very good medium red. Lovely aromatic lift to the aromas of cherry, pungent minerality, rose petal and musky soil tones. Broad and intense but showing less easygoing early sweetness than the Fremiets. This is more minerally, high-pitched and youthfully tight but still maintains an impression of pliancy. Finishes sappy, gripping and long, with terrific focus and refined tannins.

(just 20 hectoliters per hectare produced; 50% new oak): Medium bright red. Denser, darker and more serious on the nose than the other Volnay premier crus at this address, offering mineral-driven scents of black cherry, spices and licorice. Wonderfully elegant and fine-grained, combining outstanding volume and an impression of finesse and weightlessness. Conveys a small-berry concentration and near-perfect balance, finishing with refined tannins and terrific length and lift. This stunning Volnay is wonderfully approachable today but I suspect it will shut down a bit by the time it's bottled and benefit from five to eight years of cellaring.

The 2017 Volnay 1er Cru Les Caillerets displays pretty aromas of cassis and blackberries that mingle with wood smoke, spices, rich soil and dried flowers in a complex bouquet that's deftly framed by toasty new oak. On the palate, the wine is medium to full-bodied, ample and layered, with good concentration and depth and a fine-grained chassis of tannin.

One of my favorite wines in the cellar is the 2019 Volnay 1er Cru Les Caillerets, a lovely cuvée that wafts from the glass with notes of plums, rose petals, sweet berry fruit, raw cocoa and loamy soil. Medium to full-bodied, bright and lively, it's sapid and concentrated, with refined tannins and a long, saline finish.

Even more intense purple than the Chevrets with a theme of intense brilliance and zest through the middle. The wood shows a bit at the moment though he has used less in his red wines this year. Will settle down. Just a touch soapy at the moment, but all the indications are of a grand vin. Sweet ripe cherries with a good thread of acidity. Tasted: 10/1/2021

(from four different ages of vines ranging from 40 to 90 years old; Boillot's Santenots comes from younger vines): Full medium red. Brooding aromas of blueberry, blackberry and menthol; lots of tiny millerandé berries here. Silky and saline on the palate; deeper than the Santenots but showing less sex appeal and early juiciness to its flavors of dark berries, spices and menthol. But this is chewier and more concentrated and a bit more important on the finish.

Slightly reduced nose conveys and medicinal dark raspberry aroma. Then fine-grained and graceful in the mouth, conveying an impression of delicacy to the flavors of raspberry, currant and flowers. An emperor would be pleased with the intensity of this purple robe. The fruit is the most concentrated to date, and picked at the perfect time. Heady, intense, perfectly judged raspberry. This is spectacular. Not over the top, ripe tannins, just the right point of acidity, and excellent persistence. Guillaume speaks of delicacy and I can see what he means despite the Boillot style which is too intense to be designated delicate. Tasted: 10/1/2021

Deep red-ruby. Highly perfumed, musky aromas of black raspberry and smoky minerality. Large-scaled, round and rich but not yet complex; less creamy and fine-grained than the Chevrets, showing a youthful toughness from the calcaire-rich soil. Despite the fact that this was the first pinot parcel Boillot picked in 2011, this wine relies more on its big, ripe tannins than on its acids for balance. Really saturates the palate on the aftertaste.

Good bright, dark red. Dark berries, spices, sexy minerality and a hint of mocha on the reticent nose. Rich and voluminous, but with lovely lift and a light touch to the subtle raspberry, spice and soil flavors. Finishes very strong and long. All of these Volnays represent crop levels between 14 and 18 hectoliters per hectare in 2012, according to Guillaume Boillot. The Boillots eliminated about 10% of their fruit on their sorting table, and Guillaume noted that this took a lot of work.

Bright, dark red. Reticent, rather wild aromas of dark cherry and underbrush. Energetic but backward; much tighter today than the village wine and more dominated by its structure. Good full red. More brooding, medicinal aromas of redcurrant, dark cherry, spices and earth, complicated by sexy pepper and floral notes that do not come from stems; much more Pommard in style than the Chevrets, which is situated on the opposite, Meursault side of Volnay. Broad, rich, spicy and deep; this plump yet vinous wine conveys the compelling sweetness of the year with perfectly integrated acidity. (these vines are 25 to 50 years old; from whiter soil that typical yields a harder, more austere style of wine than the Chevrets): Medium red. More discreet and a bit more medicinal on the nose than the Chevrets. Juicy red berry flavors are lifted by spicy high notes but kept under wraps by salty minerality and a medicinal menthol aspect.. Boasts lovely lift and inner-mouth tension and finishes with very fine-grained tannins, but this very promising wine will require at least a few years of bottle aging to loosen up a bit.

    Vinous (91-93)

Deep red-ruby. Highly perfumed, musky aromas of black raspberry and smoky minerality. Large-scaled, round and rich but not yet complex; less creamy and fine-grained than the Chevrets, showing a youthful toughness from the calcaire-rich soil. Despite the fact that this was the first pinot parcel Boillot picked in 2011, this wine relies more on its big, ripe tannins than on its acids for balance. Really saturates the palate on the aftertaste.

    Vinous (92-94)

Good bright, dark red. Dark berries, spices, sexy minerality and a hint of mocha on the reticent nose. Rich and voluminous, but with lovely lift and a light touch to the subtle raspberry, spice and soil flavors. Finishes very strong and long. All of these Volnays represent crop levels between 14 and 18 hectoliters per hectare in 2012, according to Guillaume Boillot. The Boillots eliminated about 10% of their fruit on their sorting table, and Guillaume noted that this took a lot of work.

    Vinous (90-92)

Bright, dark red. Reticent, rather wild aromas of dark cherry and underbrush. Energetic but backward; much tighter today than the village wine and more dominated by its structure. The wild quality carries through on the palate. Best today on the back end, where fine-grained tannins spread out to saturate the palate.

    Vinous (92)

Good full red. More brooding, medicinal aromas of redcurrant, dark cherry, spices and earth, complicated by sexy pepper and floral notes that do not come from stems; much more Pommard in style than the Chevrets, which is situated on the opposite, Meursault side of Volnay. Broad, rich, spicy and deep; this plump yet vinous wine conveys the compelling sweetness of the year with perfectly integrated acidity. Finishes very long and spicy, with horizontal, mouthcoating tannins and palate-saturating sweet and savory elements.

    Vinous (91-93)

(these vines are 25 to 50 years old; from whiter soil that typical yields a harder, more austere style of wine than the Chevrets): Medium red. More discreet and a bit more medicinal on the nose than the Chevrets. Juicy red berry flavors are lifted by spicy high notes but kept under wraps by salty minerality and a medicinal menthol aspect.. Boasts lovely lift and inner-mouth tension and finishes with very fine-grained tannins, but this very promising wine will require at least a few years of bottle aging to loosen up a bit.

    Vinous (92)

The 2017 Volnay Les Fremiets 1er Cru has a perfumed bouquet of rose petal, morello cherries and light sous-bois aromas. The palate is well balanced and lightly spiced, with fine delineation. The sour cherry finish has its bitterness under firm control. This should drink well over 10–15 years.

    Jasper Morris Inside Burgundy (90-93)

Very intense mid purple, very floral, like dried cherries, a bouncing energy up at the front, continues through to the back, good acidity, some slightly dry tannins, but overall a very good prospect. I could believe there were whole bunches here, which there are not. Amazing persistence. Tasted: 10/1/2021

    Vinous (90-92)

The 2021 Volnay Les Fremiets 1er Cru is bright and focused, very much on the lighter side, as is the case with the reds this year. Crushed flowers, sweet red berry fruit, white pepper, rose petals and cinnamon add lovely aromatic top notes. There is Nebbiolo-like tension to the Fremiets that might not be exactly what Burgundy drinkers are looking for. - Antonio Galloni

    Vinous (92-94)

Deep red-ruby. Black raspberry, dark chocolate, game and a wild hint of leather on the nose, with a floral element emerging with air. Sweet, rich, broad and deep, boasting a velour-like, utterly mouthfilling texture that's rare for the vintage. Excellent acidity gives this firmly tannic, very long wine terrific energy and lift. Very strong Santenots.

    Vinous (93-95)

Violets, licorice, blueberries and graphite are some of the many notes that take shape in the 2012 Volnay Les Santenots. There is more than enough structure to support the fruit in a dramatic, large-scaled Burgundy that captures the essence of the year in its explosive personality. This intense, powerful Volnay need serious time in the cellar. A generous, beautifully resonant finish rounds things off.
