    PN AYC18 is a showpiece for the expansive dimensions, intoxicating allure and purity of Aÿ pinot noir; a wonderfully characterful blanc de noirs that celebrates the sumptuous fruit generosity of 2018 and the purity and precision of this fabled cru. With the generous tones of a full straw hue and a blush tint, it ripples with grand fruit depth of red cherries and perfectly ripe plums. The magnificent depth of complexity that is Bollinger rumbles in deep reserves, reminiscent of fruit mince spice and dried nectarines. I love that it is so emphatically Aÿ, so intrinsically Bollinger, and yet all transposed with the transparency and delicious fruit generosity that is 2018. It holds fantastic, succulent allure on a very long finish; the ripeness of 2018 translating in supple, silky fruit generosity, yet in no way heavy or broad, beautifully energised by the fine chalk salinity and pure acid freshness that make Aÿ such a beloved place.

    What a magnificent bouquet for this Dom Pérignon 2012! Pastry, a hint of smoke and autolytic notes provide a compelling counterpart to eager yet elegant aromas of citrus (lime, tangerine and kumquat) joined by those of fresh fruit, herbs, liquorice, and menthol. There is even a refreshing note of ivy. The palate is tense, vibrant, and very fresh despite its impressive density, which meets its match with an unending finish. This 2012 incarnates the very essence of Dom Pérignon with such a concentrated degree of intensity, along with a capacity for ageing, that it is surely destined for a second life in a P2 edition.

    The 2009 Dom Pérignon Rosé marks a return to a richer style of Rosé following the more ethereal 2008 Rosé. Sweet red cherry, blood orange, spice and pomegranate all build in a creamy, sensual DP Rosé that hits all the right spots. Over the last few years, Chef de Caves Vincent Chaperon and his team have lowered the still Pinot portion of the Rosé down to about 10% from a high of 28% or so, reached around 2004 and 2005. In 2009, the Rosé gains considerable textural presence from the generosity of the year. It is a superb Champagne. I preferred it to the 2008, which was also part of this tasting.

    The tightness and tension of this is impressive considering the youngest wine from this is 2015 (hot and dry year), with some wines going back to 2000. Ginger and orange zest. Some creme brulee. It's medium-bodied with apple, pie crust and floral character. It's salty and zesty yet, at the same time, complex and gorgeous. Chamomile and other floral teas highlight everything. Turns rich and flavorful at the finish. Terrific release. Really takes off at the end. Drink or hold.

    From the 5.83-hectare walled vineyard in a cooler, 'classic' vintage for Champagne, giving this a finessed and charming expression. Baked pastry and soft lemon curd notes on the nose, smells inviting and softly floral - honeysuckle, jasmine, lemon and lime rind with some peach. Juicy and so zesty straight away, bright, mouthwateing, scintillatingly fresh and lively, thrilling even, with tiny persistent bubbles that instantly froth and fill the mouth. Alive and energetic with lemon rind and juice, succulent green apples and strawberries, grapefruit and ginger bitterness with touches of salinity and graphite dotting the finish. This makes you instantly want another glass, but this has structure too and such a long finish. No malolactic fermentation. Dosage 4.5g/l. Made by Charles Philipponnat and Thierry Garnier.

Already very drinkable with the acidity not especially noticeable, although presumably it will gain in aromatic complexity with bottle age. I found it less than enthralling when I first tasted it and gave it a score of 16.5 but when I was served a glass blind from my re-stoppered bottle a few days later, I was impressed. So is the lesson, don't rush your pleasures?
